The dressing makes this potato salad extra yummy.
RECIPE INGREDIENTS:
   Salad
   1 lb. red new potatoes, cooked and quartered
   1/2 cup sliced black olives
   4 oz. feta cheese
   One 14 oz. can artichoke hearts, drained and quartered

   Dressing
   1/4 cup olive oil
   1 tbsp. lemon juice
   1 tsp. ground pepper
   1 tsp. chopped chives
   1 tsp. Dijon mustard
   1 clove garlic, minced
   Salt
1. Combine potatoes, olives, cheese and artichoke hearts in a large bowl. Combine all dressing ingredients in a jar with a lid. Shake well to mix, pour over salad and toss gently. Chill before serving. Makes 10 servings.
